Made primarily from split peas, these fritters are seasoned with local spices and herbs, reflecting the vibrant culinary traditions of the Caribbean. They are typically served with a tangy sauce, making them a popular choice for both locals and visitors. Today, variations of saheena can be found in many Caribbean islands, showcasing the dish's adaptability and widespread appeal.

Pick the center leaves of the dashing bush, avoiding the outer leaves.
Wash the dashing bush leaves thoroughly.
Flatten the leaves to prepare for rolling.
Measure out 1 pound of flour and 0.25 pound of corn flour.
Blend 1 pound of soaked split peas with enough water to cover them until smooth.
Add 1 tablespoon of whole cumin seeds, 2 tablespoons of ground cumin, 1 teaspoon of brown sugar, 2.5 tablespoons of chopped garlic, and 1 onion to the mixture.
Incorporate 2 heaping tablespoons of green seasoning, 2 tablespoons of baking powder, and 1.5 teaspoons of saffron into the mixture.
Squeeze in the juice of 1 lime and mix everything together, adding approximately 2 cups of water as needed to achieve the right consistency.
Spread the mixture onto the dashing bush leaves, rolling them tightly and pressing out air as you go.
Cut the rolled leaves into pieces for frying.
Heat oil in a frying pan until hot, but not smoking.
Fry the pieces for about 2 minutes on each side until golden brown.
