It reflects the island's rich culinary heritage, blending influences from African, Indian, and Creole cuisines. Traditionally filled with spiced chickpeas and greens, this dish showcases the use of local herbs and spices. Today, variations abound, with fillings ranging from vegetables to meats, making it a versatile treat enjoyed by many.

Homemade blends can be tailored to taste.
Start by heating 1.5 cups of avocado oil in a pan on medium heat, then reduce to low while preparing the mixture.
In a mixing bowl, combine 1 cup of all-purpose flour, 1.5 cups of ground split peas (or gram flour), 1/4 cup of additional all-purpose flour, 1 teaspoon of salt, 1 teaspoon of baking powder, and 1 teaspoon of instant yeast.
Add 1/2 teaspoon of turmeric powder to the dry ingredients.
Slowly add approximately 1.5 cups of water to the mixture, stirring until a sticky dough forms. Adjust the water as needed to achieve the right texture.
Incorporate 4 tablespoons of green seasoning into the dough and mix well.
Set the dough aside to rise for about 1 hour (or longer if desired).
After the dough has risen, prepare to fry by testing the oil temperature with a curry leaf; it should bubble up when ready.
Form patties from the dough, using avocado oil on your hands to prevent sticking. Aim for a size similar to the palm of your hand.
Increase the oil temperature to medium-high and carefully place the patties in the hot oil.
Fry the patties until they are golden brown, turning them as needed to ensure even cooking. Monitor closely to avoid burning.
While the patties are frying, prepare the chutney by blending 6 small pommecythere, 8 cloves of garlic, 1/2 hot pepper, and a cup of water until smooth. Adjust salt to taste.
Once the patties are golden brown, remove them from the oil and drain on a brown paper bag or paper towels to absorb excess oil.
Serve the sahena warm with the prepared pommecythere chutney.
