Fill a stockpot half full of water and add 12 roma tomatoes; bring to a boil for 10-15 minutes until the skin cracks.

Remove tomatoes and place them in cool water to peel the skin off.

In a 12-inch skillet, brown 1.5 pounds of certified angus beef and 1 pound of italian sausage over medium heat.

Add 1 pound of sliced mushrooms on top of the meat and fold them in to cook until browned.

Peel the tomatoes and place them in a blender; add 12 garlic cloves, 1 onion, some basil, parsley, and spinach; blend until mixed.

Pour in a can of Ro-Tel and add italian seasoning and a few shakes of Worcestershire sauce; blend again.

Take half of the blended mixture and pour it into a medium sauce pot.

Pour the blended mixture back into the pot with the meat and add 1/2 cup of dry red wine; stir well and let simmer for at least 3 hours, stirring occasionally.

About 15 minutes before the sauce is done, fill a stock pot with water to cook 1 pound of lasagna noodles; add a dash of oil and salt, and boil for 3 minutes until al dente.

Transfer the noodles to cold water to stop cooking.

In a bowl, crack 2 eggs and beat them; add 2 pounds of ricotta cheese and mix.

Grate jalapeno and add it to the ricotta mixture along with chopped spinach; mix well.

Layer the ricotta mixture over the noodles in the dutch oven, followed by the meat sauce, and repeat the layers until all ingredients are used.
