If you have the time to give them a second rise before cooking, go ahead and let them rise. It just gives them a softer texture at room temperature and for leftovers. But if you don't have time for that, it's ok! As long as you eat them fresh from the waffle iron, they are perfectly soft and fluffy (just remember that they don't make great leftovers without that second rise).

Spray the waffle iron generously with the cooking spray.

My took about 3 minutes and 30 seconds to cook at a medium high temperature. Your time may vary based on your waffle iron.
