2 cups of beans (washed and soaked overnight)
1 cup of diced pumpkin (in large wedges)
250 grams of spaghetti
Smoked pancetta
Sausage (such as Longaniza or Chorizo; we used Carniolan)
1 large diced onion
3 chopped cloves of garlic
1 tablespoon ground paprika
1 tablespoon ground cumin
1 bay leaf
1/2 cup shredded carrot (or diced)
1/2 cup diced bell pepper (green, red, or both)
1 tablespoon salt
2 tablespoons vegetable oil
30 grams of lard (pork or vegetable)
2 cloves of garlic
1 tablespoon vegetable oil
A pinch of salt

In a cooking pot, combine lard, ground paprika, garlic cloves, bay leaf, vegetable oil, and a pinch of salt. Cook over medium to low heat for an hour, stirring occasionally. Once done, set aside and let it rest.

In a large cooking pot, place the washed and soaked beans. Cover them with fresh water (twice the volume of water to the volume of beans) and cook over medium heat for about an hour and a half.

In a frying pot (or cooking pot), add vegetable oil, diced onion, chopped garlic, shredded carrot, diced peppers, ground paprika, ground cumin, bay leaf, and salt. Set your stove to medium heat and fry the mixture thoroughly for 5 minutes until everything is well combined. Cover the pot and let it cook for 40 minutes on low heat, checking and stirring occasionally.

Once the beans are al dente, add the stir fry mix to them. Blend everything together and add the raw pumpkin wedges. Adjust the salt, add smoked pancetta, and cook everything for 30 minutes, stirring occasionally.

After 30 minutes, add the pasta to the mix. Cook it according to the time recommended on the spaghetti package (ours took 10 minutes).

Turn off the heat and let the dish rest for 5 minutes, uncovered. Serve a generous amount of beans and pasta on a deep plate. Top it with a freshly fried sausage and garnish with the paprika oil.
