Tandoori Chicken

1.5 tbsp garlic paste
1 tbsp ginger paste
¼ cup plain yoghurt
2 tbsp oil
2 tbsp lemon juice
1 tbsp tandoori spice
Kashmiri red chilli powder (to taste)
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala
1 tbsp kasuri methi
Salt to taste
Red food colouring (optional)

Mix all the ingredients well to form a thick marinade.

Coat the chicken thoroughly, pushing the marinade into the slits.

Cover and marinate overnight (minimum 2 hours for best flavour).

Place chicken into the airfryer basket and airfry for 15min on one side and 10min on the other side.

Heat a small piece of charcoal till red hot.

Place it alongside the chicken in a small bowl and drizzle a little oil until it begins to emit smoke.

Cover the chicken immediately and allow the chicken to soak up that smoke for 1 minute.

Baste with butter while hot.

Sprinkle chopped chives or fresh coriander and serve with loads of fresh lemon juice.
