Dosa

Cultural Context

Dosa originates from South India and is a staple in many households, often enjoyed for breakfast or as a snack. Traditionally made from fermented rice and lentil batter, dosas are celebrated for their crispy texture and versatility. They can be served plain or filled with various ingredients, making them a beloved dish not just in India but around the world, with numerous regional variations.

1 cup semolina
1 cup millet flour
2 tablespoons masala

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Use a thick iron tawa instead of a non-stick pan.

2

Put very little oil and scatter it with water. Make the first dosa and discard it. The next ones will come off easily without using oil.

3

Rub the tawa with a cut onion or potato to prepare it, which helps the dosa lift off easily.

4

After placing the dosa, cover it with a lid. The steam generated will help lift off the dosa when it's ready.
