Take gram flour in a bowl and add asafoetida, turmeric, red chili powder, coriander powder, salt, and carom seeds.
Add oil to the mixture and mix well so that the oil coats everything.
Gradually add water to form a dough, mixing little by little until the dough is ready.
Shape the dough into rolls of any size you prefer.
Boil water in a pot and add the rolls to cook until they float, about 15 minutes.
Prepare a yogurt paste by mixing yogurt with dry spices: coriander powder, red chili powder, turmeric, and salt.
Check the gatte with a knife to ensure they are cooked, and reserve the water they were boiled in.
Cut the gatte into pieces.
Fry the gatte pieces lightly in oil until slightly golden.
In the same pan, add cumin seeds, carom seeds, mustard seeds, and asafoetida, then add ginger and green chilies.
Add chopped tomatoes and salt to the pan, mashing the tomatoes as they cook.
Add the yogurt paste to the pan and mix well, allowing it to cook until it thickens.
Add the reserved boiling water to the mixture to create gravy.
Finally, add kasuri methi and fresh coriander before serving.
