1

Wash the yellow toor dal a couple of times to remove any stones or grit.

2

Soak the washed dal for 1 hour.

3

Boil the soaked dal for about 20 minutes until cooked.

4

In a pan, melt coconut oil over above medium heat.

5

Add 4 dried red chilies, 2 teaspoons cumin seeds, and curry leaves to the hot oil for a few seconds.

6

Add 1 cup chopped onion and salt; cook for about 4-5 minutes, stirring frequently.

7

Stir in 2 tablespoons ginger garlic paste, fresh chilies, and 1 cup chopped tomato along with spices: 2 teaspoons each of chili powder, coriander, turmeric, and cumin; cook for another 4-5 minutes, stirring often.

8

Add the cooked dal to the pan and stir well; cook for another 4 minutes, stirring frequently.

9

Add water to achieve desired consistency; about 1-2 pints, depending on how soupy you want it.

10

Cook on vibrant heat for about 8-9 minutes, adding more water if it reduces too much.

11

Adjust consistency to preference, either keeping it soupy or frying it a bit more in the pan.

12

Off the heat, stir in plenty of chopped cilantro before serving.
