Over time, conkies have become a beloved treat not only in Barbados but also in other Caribbean nations, with variations that reflect local tastes and available ingredients.

Singe the banana leaves on the stove to kill any insects and make them easier to fold.
Grate the pumpkin, coconut, and sweet potato.
Mix the coconut, pumpkin, sweet potato, sugar, spices, raisins, flour, cornflour, and salt together in a large bowl.
Add the beaten egg, melted butter/margarine, and milk (optional).
Mix thoroughly by hand until you have a thick mixture that drops slowly from a spoon.
Adjust the consistency by adding more flour if too thin or more milk if too thick.
Take a piece of banana leaf about the length of a pot spoon and spoon 2 to 3 tablespoons of the mixture into the center.
Fold the leaf around the mixture, ensuring not to rip the leaf.
Place the banana mid stem at the bottom of the steamer to prevent burning.
Steam the conkies for one hour or until firm.
Unwrap and enjoy!
