Bajan Conkies are a traditional Barbadian dessert, often enjoyed during the Crop Over festival, celebrating the end of the sugar cane harvest. This dish reflects the island's agricultural heritage, combining local ingredients like cornmeal and coconut. Today, Conkies are cherished not just for their rich flavor but also as a symbol of community and festivity, enjoyed at family gatherings and cultural celebrations.

Banana adds sweetness without extra calories.
Cut the banana leaves, depending on how many conkies you are making.
Wash the banana leaves with warm soapy water and rinse off the soap.
Singe the banana leaves over a medium flame to soften them.
Dice the pumpkin and sweet potato, then puree them until very smooth.
Remove the coconut from the shell and grate it on the fine side of a grater.
In a bowl, add the pureed pumpkin, sweet potato, grated coconut, nutmeg, cinnamon, and a combination of vanilla and mixed essence.
Add melted butter, water, and milk for moisture.
Add sugar to taste, based on your preference for sweetness.
Incorporate 2 eggs as a binding agent and mix until smooth.
Add cornmeal to the mixture and mix well, ensuring there are no patches of cornmeal.
If desired, add raisins to the mixture.
Take a piece of banana leaf and add some filling inside, not too much to avoid spillage.
Wrap the filling in the banana leaf like a letter and tie it with a small piece of banana leaf, string, or plastic wrap.
Prepare a pot with a bit of water, place a bowl in it, and set a steamer basket on top to create a makeshift steamer.
Steam the conkies for approximately 30 to 45 minutes or until the cornmeal is fully cooked and no longer grainy, checking one conkie for doneness if needed.
Once finished steaming, let the conkies cool before enjoying.
