1

Welcome to the channel and introduction to the dish.

2

Show the fresh mackerel and yellow croco fish, cleaned and ready to use.

3

List all ingredients for the dish, explaining each one briefly.

4

Squeeze half a lemon and add salt to the fish, then set it aside to marinate for a few minutes.

5

Prepare the stuffing (rough) for the fish by combining black pepper, vegetable seasoning, chili powder, parsley, garlic, ginger, and chopped spring onions in a mortar and pestle.

6

Chop green bell peppers and add them to the mortar, then mix everything into a smooth paste.

7

Create a deep hole in the center of the fish to insert the stuffing, being careful of bones.

8

Stuff the fish with the prepared rough, ensuring it's packed well.

9

Wash the rice three times with cold water using a strainer to catch the small grains.

10

Steam the washed rice in the microwave for about 10 minutes.

11

Prepare a side dish (dahar) by mixing warm water, lime juice, chili powder, and vegetable seasoning.

12

Add some of the sauce used for cooking the fish and vegetables to the dahar mixture and set aside.

13

After steaming, break apart the rice to loosen it up and add it to the sauce used for cooking the fish and vegetables.

14

Check the rice for doneness; if not done, cover with aluminum foil and lower the heat to medium, cooking for an additional time until ready.

15

Plate the rice and top it with the fish and vegetables, serving with the dahar on the side.
