Pork shoulder is leaner and cheaper.

Heat cooking oil in a large pot over medium heat until shimmering.

Add pork belly and sear until browned on all sides, about 5-7 minutes.

Remove pork and set aside; drain excess oil if necessary.

In the same pot, sauté garlic and onion until fragrant and translucent, about 3-4 minutes.

Return the pork to the pot and add soy sauce, pineapple juice, and salt to taste.

Stir in brown sugar and black beans; bring to a simmer.

Cover and cook on low heat until pork is tender, stirring occasionally.

Add chopped braised tofu and zucchini during the last 15 minutes of cooking.
