750g lean grass-fed beef, cubed
1/4 cup coconut milk
2 tbsp. tomato paste
3 garlic cloves, finely crushed
1 tbsp. ground ginger
4-6 tbsp. curry powder
2 red capsicums, cut into strips
1 Spanish onion, thinly sliced into rounds
1 tbsp. extra virgin coconut oil
Sea salt and pepper, to taste
Parsley for serving

In a bowl mix together coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper and whisk together.

Add the beef and leave to marinate for 10-20 minutes.

In a frying pan add the onion, capsicum, coconut oil and season, sauté for 5-10 minutes. Once cooked move to a bowl and keep warm.

In a grilled pan or on a BBQ, cook the beef for 3-5 minutes each side.

Serve the beef on a bed of the onion and capsicum mixture and sprinkle with parsley on top.
