Instructions

  1. 1Heat olive oil in a large skillet over medium heat until shimmering.
  2. 2Add chopped onion and red bell pepper; sauté until softened, about 5 minutes.
  3. 3Stir in minced garlic and red pepper flakes; cook until fragrant, about 1 minute.
  4. 4Add shrimp to the skillet; cook until pink and opaque, about 3-4 minutes.
  5. 5Stir in canned white beans and chicken broth; bring to a simmer.
  6. 6Add bay leaves and season with salt and black pepper; simmer for 5 minutes.

  • 2 cups chicken broth

  • 1 pound turkey sausage, casings removed
  • 2 cups broccolini, trimmed and chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. 1In a medium saucepan, bring the chicken broth to a boil.
  2. 2Add the orzo pasta to the boiling broth and cook according to package instructions until al dente, about 8-10 minutes.
  3. 3In a large skillet, heat the olive oil over medium heat.
  4. 4Add the turkey sausage to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.
  5. 5Add the chopped broccolini to the skillet and sauté for an additional 3-4 minutes until tender.
  6. 6Once the orzo is cooked, drain any excess broth and add the orzo to the skillet with the sausage and broccolini.
  7. 7Stir in the grated Parmesan cheese, red pepper flakes, salt, pepper, lemon juice, and fresh parsley.
  8. 8Mix everything together until well combined and heated through, about 2 minutes.
  9. 9Serve warm, garnished with additional Parmesan and parsley if desired.
