Heat oil in a pan and add urad dal seeds, mustard seeds, curry leaves, and a pinch of asafoetida to prepare the tadka.
Assemble the puris by placing a dollop of classic hummus on each flat puri.
Top the hummus with a layer of the prepared vada masala mixture.
Add spicy green chutney and sprinkle sev generously over the assembled puris.
Garnish with black olives and additional chopped coriander.
