1kg chicken, cut into curry pieces (bone-in)
4 tbsp of mustard oil
1 tsp of cumin seeds
2 bay leaves
5 green cardamom pods
1 inch cinnamon stick
2 medium size onions, sliced
1 and 1/2 tbsp of ginger&garlic paste
1 tsp of ground coriander
1 tsp of ground red chilli
1 tsp of chilli flakes
3/4 tsp of ground turmeric
1/2 tsp of garam masala
1/2 tsp of ground cumin
1 tbsp of tomato paste
50g of unsalted butter
salt to taste
some chopped coriander leaves
few fresh chillies

Add cumin seeds, bay leaves, cardamom pods, and cinnamon stick; sauté until fragrant.
