Originating from Venice, the Bellini is a classic Italian cocktail created in the 1940s by bartender Giuseppe Cipriani at Harry's Bar. This refreshing drink combines the sweetness of ripe peaches with sparkling prosecco, making it a popular choice during the summer months. Traditionally, it is enjoyed as an aperitif, often served at celebrations and gatherings. Today, variations exist worldwide, with some adding different fruits or flavors to the mix.

Sparkling water reduces alcohol content while maintaining fizz.

Canned peaches are often less expensive and available year-round.
Chill a flute glass and a mixing glass.
Take a fresh ukrainian peach and cut it into pieces, using about half or a little more.
Add a couple of dashes of sugar to the mixing glass.
Pour in 10 mils of apricot brandy.
Add a splash of sparkling wine to the mixing glass.
Blend the mixture until smooth.
Add some ice to the mixture and give it a quick stir.
Pour the mixture into the chilled flute glass.
Garnish the drink with a slice of peach.
