Cut the white peaches in half and remove the pit.

Put the peach skin into the blender with the peach flesh.

Puree the peaches until liquefied.

Strain the peach puree through a sieve using the back of a spoon to push it through.

Measure about 1/3 of the peach puree into each glass.

Top off each glass with prosecco, allowing it to settle before adding more.

Gently stir the mixture in the glass to combine without losing the fizz.

Garnish with a slice of peach.
