Remove the tongue from the pot and let cool slightly.
Peel off the tough outer skin of the tongue.
Slice the tongue into thin pieces.
Heat olive oil in a skillet over medium heat until shimmering.
Add sliced tongue to the skillet and sauté for 5-7 minutes until lightly browned.
Sprinkle with paprika and stir to coat evenly.
Drizzle with vinegar and add minced garlic, cooking for an additional minute.
Serve with lemon wedges and garnish with fresh herbs.
