1 tbsp of cornstarch
1 lemon, squeezed
1 lbs of top sirloin beef, thinly sliced
2 small yellow potatoes, thinly sliced
1/2 onions, thinly sliced
2 tbsp of oil (used canola)
1 cup of water
Salt and pepper to taste
Green onions for garnish

Take a large bowl and add the meat and all the marinade ingredients. Mix well and put in fridge covered for 30 mins.

Preheat oven to medium high heat.

Using a frying pan/cast iron skillet, brown the potatoes on both sides but don't cook fully. Remove the potatoes and set aside and cook the onions.

Once the onions are charred, add meat and cook for 5 minutes. Try not to mix too much as you want crispy edges.

Add the potatoes back in, bay leaves and water.

Cover and cook for 10 minutes until the potatoes are fully cooked. Season with salt and pepper to taste.
