Prepare whole spices: dry roast coriander powder, white cumin, black pepper, nutmeg, cardamom, cloves, cinnamon, and dried red chilies until fragrant.

Let the roasted spices cool and then grind them into a powder.

In a bowl, add 750 grams of chicken and mix with 1 tablespoon coriander powder, 1 tablespoon Kashmiri red chili powder, 1/2 teaspoon turmeric powder, 1 teaspoon salt, 1/2 tablespoon ginger-garlic paste, and 3/4 cup yogurt.

Squeeze in the juice of 1/2 lemon and add crushed brown onions, fresh coriander, and mint leaves.

Mix everything well and cover to marinate for 1 hour.

In a kadhai, heat 3/4 cup oil and add 1 chopped onion and a bay leaf; fry until the onion is light pink.

Add the marinated chicken to the kadhai and fry until oil separates, about 5-6 minutes.

Add the ground spice mix to the chicken and cook for 1.5 to 2 minutes.

Pour in 1 cup of water and mix well; cover and cook until chicken is tender, about 7-8 minutes.

Add whole green chilies and chopped coriander before serving.
