Sift together 190 g all-purpose flour, 3 g salt, 3 g baking powder, 2 g baking soda, 4 g ground cinnamon, and 1 g ground nutmeg in a bowl and set aside.

In a large bowl, add 190 g grated zucchini, 140 g light brown sugar, 80 ml olive oil, 80 ml Greek yogurt, 2 large eggs, and 5 ml vanilla extract. Blend these together until combined.

Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

Add 1 teaspoon of grated lemon zest and 55 g of chopped walnuts (optional) to the mixture and fold in gently.
