1

Slice the sirloin steaks thinly after placing them in the freezer for 30 minutes.

2

Remove any large pieces of fat from the steak slices.

3

In a bowl, mix the sliced steak with 1 egg to coat.

4

Add 4 tablespoons of cornflour, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 1/8 teaspoon white pepper to the bowl and toss to coat the steak.

5

Heat 3 tablespoons of sunflower oil in a large frying pan or wok over high heat until very hot.

6

Add the beef strips to the hot oil one at a time, frying until dark brown and crispy, about 5-6 minutes with 3-4 stirs during cooking.

7

Remove the beef using a slotted spoon and place it in a bowl lined with kitchen roll to soak up excess fat.

8

Repeat the frying process for the second batch of beef if necessary.

9

In the same pan, add 1/2 tablespoon of oil and turn the heat down to medium.

10

Add a sliced onion and cook for 2 minutes until slightly softened.

11

Add a finely chopped red chili, 1 teaspoon minced ginger, and 3 minced cloves of garlic, cooking for about 30 seconds while stirring.

12

Add 2 tablespoons of rice vinegar, 3 tablespoons of dark soy sauce, 2 tablespoons of tomato puree, 6 tablespoons of sugar, 2 tablespoons of tomato ketchup, and 2 tablespoons of sweet chili sauce to the pan, stirring everything together.

13

Turn up the heat and let the sauce bubble for a couple of minutes until it starts to reduce.

14

Add the crispy beef back into the pan and stir to heat through for 1-2 minutes.
