1 cup chicken sliced
1/2 cup shrimps chopped
1 tsp ginger paste
1 tsp garlic paste
1 tbsp chili paste
2 tbsp ketchup
2 tbsp soy sauce
1 tsp salt
1 tbsp vinegar
1 tsp sugar
1 egg
3 tbsp corn starch
6 cups water (room temperature)
1 cup chicken stock
4 slices galangal/ginger
1 stick lemongrass
4 green chilies sliced
2 tbsp lemon juice
1 tsp black pepper

Heat 1 tsp of oil in a pan over medium heat.

Add ginger paste, garlic paste, chili paste and sliced chicken pieces. Add salt to taste and sauté for a couple of minutes (add water if needed to sauté).

Add ketchup, sugar, soy sauce, chopped shrimps and continue to cook for 5 minutes.

Remove from heat and set aside.

In a deep skillet or saucepot, add 6 cups of room-temperature water. Do not turn on heat as we need to mix everything together before cooking it.

In a separate bowl, add 3 tbsp of water and stir in cornstarch. Add an egg and mix everything well.
