Add ginger and green chilies; sauté for a minute.
Stir in the mashed potatoes and green peas; season with turmeric, salt, sugar, and chopped coriander leaves; cook for 5 minutes.
Allow the filling to cool before proceeding.
Divide the dough into small balls; flatten each ball into a disc.
Place a spoonful of filling in the center of each disc; fold the edges over to seal.
Roll the filled dough gently to maintain shape without breaking.
Heat oil in a deep pan until hot; fry the kochuris until golden brown, about 3-4 minutes per side.
Drain on paper towels to remove excess oil.
Serve hot with pickles or curry.
