Wash the hen with lemon and water to remove microbes, using 2 lemons inside and out.

Prepare the paste for the hen by mixing garlic, half of the onion, parsley, cilantro, Goya seasoning, 1 tablespoon and 3 tablespoons of tomato paste, and 1/4 cup of white wine in a food processor until well blended.

Cover the hen with the prepared paste, ensuring it penetrates well, and save some paste for later.

Cover the hen with aluminum foil and let it rest for 1 hour to absorb the flavors.

Heat 3-4 tablespoons of olive oil in a preheated skillet.

Sauté the white onion until it softens, then add garlic and continue to sauté.

Add chopped green peppers and continue to stir-fry.

Add chicken bouillon and ground beef, breaking up the meat as it cooks.

Stir in the diced potatoes, carrots, and seasonings, then add corn, parsley, cilantro, and olives.

Let the filling cool before stuffing the hen.

Stuff the hen with the filling and sew it shut with a needle and thread to prevent the filling from escaping.

Spread more paste on top of the hen before placing it in the oven.

Preheat the oven to 350°F (about 175°C) and bake the hen covered for 1 hour.

Increase the oven temperature to 400°F (about 200°C) after 1 hour, uncover the hen, and continue roasting for another hour until the skin is crispy.
