1 kilogram chicken
2 medium onions (finely sliced)
3 tablespoons ginger-garlic paste
2 teaspoons yellow chili powder
8 to 10 green chilies (roughly chopped)
1 cup yogurt (approximately 200 grams)
2 medium tomatoes (chopped)
3 to 4 tablespoons green chili pickle
4 cups sela rice (approximately 800 grams)
6 cups water (including stock)
1 cup milk (optional)
1 and a half tablespoons salt
1 tablespoon kewra water
red-orange food color (optional)
half a cup fried onions

Boil 4 cups of water in a pan and add 2 tablespoons of whole coriander, 2 tablespoons of fennel seeds, 1 medium onion, 8 to 10 green chilies, and 2 teaspoons of salt.

Add whole spices: 1 large cardamom pod, 4-5 cloves, 2 pieces of cinnamon (2 inches each), 4-5 small cardamom pods, 1 teaspoon black pepper, and half a star anise.

Cover and simmer on low flame for 10 minutes to release flavors.

After 10 minutes, add 1 kilogram of chicken pieces and mix well.

Bring to a boil on high flame, then reduce to low flame and cook for 12-15 minutes until chicken is 70-80% cooked.

Remove chicken pieces and strain the stock, setting it aside.

In a large pot, heat 1 cup of oil and fry 2 medium-sized sliced onions until lightly pink.

Add the cooked chicken pieces back to the pot along with the strained garlic from the stock.

Add 3 tablespoons of ginger-garlic paste and 2 teaspoons of yellow chili powder.

Add 8 to 10 roughly chopped green chilies and sauté until the raw smell disappears.

Stir in 1 cup of yogurt and 2 chopped tomatoes, cooking for 7-8 minutes until the mixture thickens.

Add 3 to 4 tablespoons of green chili pickle and mix well.

Add 4 cups of soaked sela rice and stir.

Pour in 6 cups of water (including the stock) and 1 cup of milk (optional).

Add 1 and a half tablespoons of salt and 1 tablespoon of kewra water for aroma.

Bring to a boil on high flame, then reduce to low flame and cover, cooking for 5-7 minutes until water is mostly absorbed.

Optionally, add red-orange food color and half a cup of fried onions, then cover and cook on low flame for 10-12 minutes until fully cooked.

Let it rest for 10-15 minutes before serving.
