Pour in stock to cover the lamb; bring to a simmer.
Cover the pot and reduce heat to low; braise for 2-3 hours until lamb is tender.
Add chopped carrots during the last 30 minutes of cooking.
Taste and adjust seasoning if necessary before serving.
