Add a little drop of cooking oil to a heavy-based pan on the stove.
Brown the lamb shanks in the pan until they have color on all sides.
Remove the browned lamb shanks and place them in a casserole dish.
Add sliced onions to the pan and cook for about 4 minutes until softened.
Add crushed garlic to the onions and mix around.
Add spices: cinnamon, ground cumin, and a teaspoon of ground ginger to the pan.
Add stock and chopped tomatoes to the pan.
Return the browned lamb shanks to the pan along with chopped apricots and carrots (cut into about 1-inch pieces).
Pour the liquid mixture gently over the lamb shanks.
Cover and place in the oven to cook for about 1.5 hours until the lamb is tender.
15 minutes before the end of cooking, add chopped courgettes, chickpeas, orange blossom water, and honey to the dish.
Return to the oven for a further 15 minutes.
