Whisk together 60 grams of whole milk and 25 grams of strong white flour in a saucepan.
Heat the mixture while whisking until it thickens, then turn off the heat and let it cool.
In a mixing bowl, combine 30 grams of caster sugar, 4 grams of fine sea salt, and 3.5 grams of dried yeast.
Add 30 grams of lightly beaten egg and 85 grams of whole milk to the dry ingredients and mix together.
Add 225 grams of strong white flour, 40 grams of butter, and 1 gram of cardamom to the mixture.
Mix until a smooth dough forms, then scrape it out and form it into a ball.
Place the dough back in the bowl and let it rest and prove for about 1 hour until doubled in size.
Divide the dough into two equal parts.
Shape one part into 6 plain buns and the other part into 6 buns with 30 grams of dark chocolate pieces.
Place the shaped buns on a lightly greased baking tray, spaced apart, and cover them.
Let the buns rise again until puffy, about 30-45 minutes.
Preheat the oven while the buns are rising.
Bake the buns in the oven until golden brown, about 15-20 minutes.
