Dry Moong Dal

Dry Moong Dal is a staple in Indian households, particularly in the northern regions. This dish is cherished for its simplicity and nutritional value, being rich in protein and fiber. Traditionally served with rice or flatbreads, it embodies the essence of comfort food in Indian cuisine. In modern times, variations include adding different vegetables or spices, making it adaptable for various dietary preferences.

Split yellow peas are often less expensive and provide similar texture.

Parsley is a more common herb and can be used in place of cilantro.
Rinse 3 cups of moong dal under cold water until the water runs clear.
Drain the moong dal after rinsing.
Heat oil in a pan over medium heat.
Add 1 teaspoon of red chili powder and sauté for a few seconds.
Add chopped onion and sauté until it changes color, about 5-7 minutes.
Add 2 chopped green chilies and 1 teaspoon of ginger paste; sauté for a few seconds.
Add 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of cumin powder; sauté for 1 minute.
Add the rinsed moong dal to the pan and mix well with the spices.
Add about half a cup of water to the mixture.
Cover the pan and cook on medium-low heat for about 5 minutes, stirring occasionally.
Check the dal after 5 minutes; it should be cooked perfectly with each grain separate.
Add 1 teaspoon of garam masala and salt to taste; mix well.
Serve the moong dal with chutney and optionally with onions and tomatoes.
