Tilapia and catfish are more affordable and widely available.

Heat oil in a large pot.

Add shallot pepper, celery, fine thyme, garlic, and onion to the pot and fry for about a minute.

Add the washed eddo leaves to the pot and stir, allowing them to steam for about 5 minutes.

Pour in the coconut milk and stir well.

Add the chicken bouillon cubes, salt, black pepper, and five spice to the pot; mix thoroughly.

Add the washed brown rice to the pot and stir.

Cover the pot and allow the mixture to cook until the rice is done, checking occasionally.

Once cooked, serve the calaloo cookup with fried snapper fish on top.
