Variations exist across different regions, with some adding ingredients like minced meat or vegetables, but the classic version remains a beloved staple.

Crack 2 eggs into a bowl and whisk them until well combined.
Slowly add 3/4 cup of warm water while stirring to achieve a smooth mixture.
Add a pinch of salt and whisk again until well mixed.
Cover the bowl with cheesecloth, ensuring it fits tightly around the bowl.
Pour the egg mixture slowly into another bowl to filter it through the cheesecloth.
Use chopsticks to help the liquid filter through, if necessary.
Scoop out any bubbles that form on top of the egg mixture after filtering.
Cover the top of the bowl with plastic wrap and poke a few holes in it.
Place the bowl into a steamer over boiling water and steam on medium-high heat for 10 minutes.
After 10 minutes, check the texture of the steamed egg; it should be delicate and pudding-like.
Serve the steamed egg with chopped scallions and a drizzle of soy sauce.
