200 grams chicken sausage
2 tbsp ghee
2 nos green cardamom
1 no bay leaf
3 nos cloves
½ cup onion (thinly sliced)
1 ½ tsp ginger garlic paste
1 ½ tsp salt
¼ tsp turmeric powder
½ tsp red chilli powder
½ tsp garam masala powder
½ cup tomato (thinly sliced)
2 nos green chilli (slit)
1 cup basmati rice (soaked for 15 minutes)
2 cups water
2 tbsp coriander leaves (chopped)
2 tbsp mint leaves (chopped)

Cut the chicken sausage into 1-inch pieces.

Heat oil in a pressure cooker. Fry the sausage pieces until they change colour. Remove them from the cooker.

Add ghee to the same cooker. Add the whole spices, then add onion. Saute until it turns a light golden brown.

Add the ginger garlic paste, salt, red chilli powder, turmeric powder and garam masala. Saute for 2 minutes.

Add the tomatoes, slit green chillies, coriander leaves and mint leaves. Mix to combine.

Add the Basmati rice and the fried sausages, and saute gently.

Add water, cover and cook for 1 whistle on high heat. Allow the steam to release naturally.

Fluff gently using a fork and serve.
