1 tbsp ginger juice
1/2 tsp sugar
6-7 basil leaves
2 1/2 cups boiled rice
salt to taste
1/4 tsp vinegar

Remove mushrooms from the plastic bag and store them in a brown paper bag.

Clean the mushrooms by scrubbing them in water and rinsing them twice.

Pat dry the mushrooms with a napkin, trim the stems, and peel the mushrooms.

Slice the cleaned mushrooms into thick slices.

Heat 1 tbsp of vegetable oil in a pan.

Add 1 tbsp of finely chopped garlic and 1 1/2 tbsp of finely chopped ginger to the pan.

Add 2 finely chopped green chillies and stir-fry the aromatics for a few seconds.

Add 1 1/2 tbsp of dark soy sauce, 1 tbsp of chilli sauce, 1 tbsp of ginger juice, and 1/2 tsp of sugar to the pan.

Tear in 6-7 basil leaves and mix everything together.

Add 2 1/2 cups of boiled rice to the pan and toss everything together.

Season with salt to taste and add 1/4 tsp of vinegar.

Add some spring onions with leaves and mix well.

Let the rice cook on high flame for 1 minute.

Finish with some crushed black pepper and mix together.
