Start with cold cooked basmati rice; cold rice works better for fried rice than warm or hot rice.

Slice white fresh mushrooms; you could chop them smaller if desired.

Prepare fresh garlic and fresh ginger.

Slice onion.

Use a high-sided skillet or wok and heat sunflower oil until hot.

Add garlic and ginger to the hot oil, cooking for a few seconds until they start to color slightly to flavor the oil.

Add sliced onion and sauté for about 2-3 minutes until translucent.
