Singapore Beef Noodles

Cut beef into smaller portions, initially in longer strips then into cubes.
Remove excess fat from the beef.
Marinate beef with homemade all-purpose seasoning, beef seasoning, a teaspoon of soy sauce, and a teaspoon of salt; mix well and let sit for about 5 minutes.
Melt coconut oil in a wok over medium heat.
Add the marinated beef to the wok and cover; cook for about 10 minutes.
Boil water for the noodles while the beef is cooking.
After 10 minutes, add chopped onions, ginger, and garlic to the beef; stir and cover for about 5 minutes.
Add chopped bell peppers and carrots to the wok; stir and cook until veggies are tender.
Create space in the wok and scramble 2 eggs for about 3 minutes; then stir everything together.
Once the water is warm (not boiling), turn off the heat and soak the vermicelli noodles in the warm water for about 3 minutes in a colander.
Add the drained noodles to the beef and vegetable stir-fry; mix well.
Turn off the heat and sprinkle with Maggie seasoning and chopped spring onions; stir-fry everything together.
