1 cup sour yogurt
half cup oil
half cup sugar

2 tablespoons white sesame seeds
1/4 teaspoon crushed black pepper
1.5 teaspoons red chili powder
1/2 teaspoon turmeric powder
1/4 teaspoon papad khar (a type of alkaline powder)
1/4 teaspoon lemon juice

Take a bowl and add 350 grams of moraiyo flour.

Add half cup of sabudana flour and half cup of rajgira flour to the bowl.

Wash the sabudana and crush it to remove any dirt.

Crush the moraiyo flour in a mixer to make it fine.

Crush the sabudana in the mixer as well.

Mix the three flours together in a bowl.

Sift the mixture to remove any large particles.

In a separate bowl, take 1 cup of sour yogurt and add half cup of sugar and half cup of oil.

Mix these three ingredients until the sugar dissolves completely.

Add 1.5 teaspoons of salt, 2 tablespoons of white sesame seeds, 1/4 teaspoon of crushed black pepper, and 1.5 teaspoons of red chili powder to the yogurt mixture.

Add 1/2 teaspoon of turmeric powder and mix everything well for about a minute.

Gradually add the flour mixture to the yogurt mixture while mixing.

Do not add water; the consistency should remain thick.

Taste the mixture and adjust seasoning if necessary.

Let the mixture rest for half an hour.

After resting, add 1/4 teaspoon of papad khar to the mixture and mix well.

If the yogurt is too thin, add 1/4 teaspoon of lemon juice for acidity.

Divide the dough into two parts; one part will be kneaded slightly with a few drops of water to make it smoother.

Heat oil in a pan on low flame to check if it's hot enough by adding a small amount of dough.

Once the oil is hot, shape the dough into small discs and carefully drop them into the oil.

Fry until golden brown, turning occasionally for even cooking.

Remove the fried fulwadi with a slotted spoon and drain on paper towels.
