This dish features pork belly with crispy skin, often served with festive sides like red cabbage and gravy. While its roots are deeply embedded in Norwegian culture, variations can be found across Scandinavia, showcasing local flavors and traditions.

Vegetable broth is lighter and can be made from scraps.
Slightly cut the skin of pork belly. Season with salt and pepper. Refrigerate for 2-3 days.
Preheat the oven to 220°C.
Add chopped onions, carrots, and extra virgin oil in the baking tray, put the pork belly, water, and cover with foil. Bake at 220°C for 45 minutes (steaming).
After 45 minutes, take out of the oven, bake again without the foil at 200°C for 1 to 1.5 hours.
After 1.5 hours, increase the temperature to 230°C and bake for another 15 minutes.
Let rest for 15 minutes before serving.
For gravy sauce: melt butter, add flour, slowly add the stocks, mix well, then add heavy cream, season with salt and pepper.
