Chicken thighs are leaner, while pork shoulder is more affordable.

Vegetable broth is lighter and can be made from scraps.
Score the skin of the pork belly in a crosshatch pattern.
Rub salt and black pepper into the scored skin and meat.
Sprinkle caraway seeds and crushed garlic over the pork.
Place the pork belly in a roasting pan, skin side up.
Add chopped onion and bay leaves around the pork.
Pour water into the pan, covering the bottom without touching the skin.
Roast in a preheated oven at 200°C (392°F) for 1 hour.
Reduce the temperature to 160°C (320°F) and roast for another 2-3 hours until tender.
Increase the oven temperature to 240°C (464°F) for the last 20-30 minutes to crisp the skin.
Remove from the oven and let rest for 15 minutes before slicing.
Serve with boiled potatoes, red cabbage, gravy, apple sauce, and mustard.
