Chicken liver is lower in fat and more accessible.

green bell pepper

Cabbage is inexpensive and adds bulk.
Soak cow liver in milk for about 30 minutes to remove impurities and tenderize
Cut liver into bite-sized pieces and remove membrane and veins
Dice onions, tomatoes, and green bell pepper
Heat olive oil in a pan and cook diced vegetables until soft
Add minced garlic and ginger to the pan
Season with salt to help soften tomatoes
Drain liver from milk and pat dry with a paper towel
Heat olive oil in another pan for pan-searing the liver
Add liver pieces to the hot oil and cook for 2-3 minutes until well cooked through
Add the cooked vegetable mixture and tomato paste to the liver
Squeeze lemon juice over the dish
Garnish with chopped cilantro before serving
