Remove the membrane from the liver using a kitchen paper towel.

Chop the liver into bite-sized pieces and soak in 1 cup of milk for 15-20 minutes.

Drain the milk and wash the liver until clean.

Heat 2 tbsp of cooking oil in a pan over medium flame.

Sauté chopped onions for about 1 minute until golden brown.

Add crushed garlic and ginger; sauté for 30 seconds until fragrant.

Add the liver to the pan and stir to combine with onions, garlic, and ginger; cook for 2-5 minutes to sear the liver.

Add a seasoning cube, tomatoes, tomato paste, paprika, garlic powder, and black pepper; stir in a splash of water.

Add salt and a pinch of sugar to balance the acidity of the tomatoes.

Pour in half a cup of water and cook for an additional 5-15 minutes until the liver is tender.

Add green capsicum and cook for 1 minute to retain its crunch.

Garnish with coriander and serve over ugali, rice, or chapati.
