Liver Stew

Liver stew is a cherished dish in Uganda, often prepared for family gatherings and special occasions. It highlights the use of local ingredients and reflects the resourcefulness of Ugandan cuisine, where every part of the animal is utilized. This dish showcases the rich flavors of spices and vegetables, making it a comforting meal. Variations exist across East Africa, with each region adding its unique twist to the recipe.

Chicken liver is lower in fat and more accessible.
vegetable oil

Olive oil adds flavor and is healthier.
bay leaves

Dried thyme is more common and still aromatic.
green bell pepper

Cabbage is inexpensive and adds bulk.
Place liver in a bowl with water to help peel it.
Peel the liver, removing the casing.
Drain the water and cut the liver into medium-sized pieces.
Massage crushed ginger into the liver and let it soak for at least 15 minutes.
Chop tomatoes and blend them until smooth.
Slice red onions thinly.
Crush garlic with salt.
Heat vegetable oil in a pan until warm.
Add sliced red onions and sauté until translucent.
Add crushed garlic and sauté for a few minutes until everything is translucent.
Add the marinated liver to the pot and cook until it starts releasing its juices and those juices dry out.
Add blended tomatoes to the pot and simmer on low heat for about 10 minutes or more until the stew thickens.
