1. Preheat the oven: For static oven, set to 200°C for 10 minutes, then lower to 190°C for 15 minutes. For ventilated oven, set to 200°C for 15 minutes, then lower to 190°C for 15 minutes.
2. Prepare the zeppole: Combine water, salt, butter, and flour in a pot and cook until the mixture forms a ball. Remove from heat and let cool slightly.
3. Add eggs one at a time, mixing well after each addition until smooth.
4. Pipe the zeppole onto a baking sheet using a star tip.
5. Bake in the preheated oven, with the door slightly ajar for static oven or closed for ventilated oven, until golden and cooked through.
6. Turn off the oven and leave the zeppole inside with the door ajar to cool down.
7. Prepare the crema pasticciera: Whisk together egg yolks, sugar, and flour in a bowl.
8. Heat the milk with lemon zest and vanilla extract, then gradually add to the egg mixture, whisking constantly.
9. Cook the mixture on the stove until thickened, then let cool.
10. Fill the cooled zeppole with crema pasticciera and top with amarene sciroppate and powdered sugar.
