Preheat the oven to 300°F (150°C).
Slice the bacon and render it in a cast iron pan until crispy.
Grease a loaf pan with the rendered bacon fat.
Crack 8 eggs into a bowl and beat them together.
Add 1/2 cup of heavy cream to the eggs and mix well.
Grate 1 cup of Pecorino Romano cheese and add it to the egg mixture.
Trim the broccoli into small pieces and add it to the mixture.
Season the mixture with salt and pepper to taste.
Mix all ingredients until well combined.
Pour the egg mixture into the greased loaf pan.
Cover the loaf pan with aluminum foil or parchment paper.
Bake in the preheated oven for about 25 minutes, or until the center is not jiggly.
Remove from the oven and let cool for about 10 minutes.
Run a knife around the edges of the loaf pan to loosen the egg bites.
Flip the loaf pan over to remove the egg bites onto a cutting board.
Slice the egg bites into squares for breakfast sandwiches.
