Preheat your oven to 375 degrees.
Cut the bacon into thirds and line them on a cooking sheet with aluminum foil.
Bake the bacon in the oven for 15 to 20 minutes until crispy.
Once the bacon is crispy, remove it from the oven and place it on a plate lined with paper towels to absorb excess fat.
Lower the oven temperature to 300 degrees.
Grease a muffin tin with nonstick cooking spray.
Crack the eggs into a blender (preferably a larger one) and add the shredded cheese and cottage cheese.
Add salt, pepper, and hot sauce to the egg mixture and blend until light and frothy.
Pour the egg mixture into a pitcher for easy pouring.
Add the bacon to the muffin tins (or, as suggested, add it on top of the eggs).
Pour the egg mixture into the muffin tins, filling each well almost to the top.
Place a roasting pan in the oven and fill it with about an inch of hot water to keep the egg bites moist.
Bake the egg bites for about 30 minutes or until the centers are just set.
Allow the egg bites to cool slightly for about 5 minutes before running a knife around the edges and removing them with a fork.
