Blend the homemade farmer's cheese until very smooth using a hand blender or food processor, or skip this step if desired.
Add 1 egg yolk, 1/4 cup sugar, and 1/4 teaspoon salt to the blended cheese and mix well.
Add 1/4 cup flour to the mixture and combine until smooth.
Use a little flour on the surface of the board to prevent sticking.
Shape the mixture into pancakes using your hands, flipping them over to coat both sides in flour.
Use a cup to create a smooth round shape for the pancakes, smoothing out the edges.
Heat coconut oil in a pan over medium heat.
Fry the pancakes in the coconut oil, covering the pan with a lid to help them cook evenly inside.
Flip the pancakes over and fry the other side until golden brown.
