Combine yeast, salt, and sugar in a bowl.
Prepare 2 cups of water, but do not use all at once; add gradually until the dough is sticky but not too wet.
Mix the ingredients by hand until a dough forms.
Let the dough rise until it doubles in size, about 45 minutes, but this may vary depending on the temperature.
After the first rise, punch down the dough to remove air.
Transfer the dough to a container for a second rise until it doubles again.
After the second rise, transfer the dough to a round pot lined with parchment paper.
Add a little water to the pot and cover it.
Preheat the oven to 200°C (400°F) for the initial rise.
After about 5-7 minutes, increase the temperature to 425°F (218°C) and bake for 40 minutes, removing the lid in the last 5 minutes.
