Warm 1 cup of milk in the microwave for about 45-55 seconds until warm.
In a bowl, add 1 cup of water and warm it up in the microwave for about 45 seconds.
Combine warm milk and water in a larger bowl.
Sprinkle in 4 teaspoons of active dry yeast and 1/4 cup of brown sugar, then mix and let it bloom for 5 minutes.
In a separate bowl, combine 4 cups of whole wheat flour, a pinch of salt, and coriander.
After the yeast has bloomed, add it to the dry mixture along with 1 egg and mix with a fork.
Use hands to knead the dough, adding a little water if it feels too sticky.
Cover the dough and let it rise for about 2 hours.
Preheat the oven to 350°F (175°C).
Grease an aluminum tin with olive oil.
Shape the risen dough into a loaf and place it in the greased tin.
Bake in the preheated oven until golden brown.
